It’s rare that I have a Monday off from work. It’s even more unusual that I have a Monday off with both of my grown children at home! I decided last evening that Easter Monday was the perfect opportunity to enjoy a lazy breakfast together. Both kids agreed, as long as they could sleep in.
I have seen many Shakshuka recipes on Pinterest (my go-to for all my favorite dishes), but they all include the same basic ingredients: onions, peppers, garlic, tomatoes and savory spices. They are slowly cooked into a rich, aromatic sauce for poaching the eggs that make this a delicious meal. I had most of the ingredients on hand, but had to improvise a bit. I typically use red and yellow peppers instead of green, but it turned out just fine.
Of course the best part of the meal was spending time with my family. I savored every bite! 😊
